Description
This apple fritter recipe is a definite crowd pleaser. Serve these as a special treat on a cold evening. You can even mix things up and create banana fritters with the same batter.
Ingredients
3 medium cooking apples, peeled and cored
50 g plain flour
pinch salt
1 teaspoon icing sugar, sifted
4 water
2 butter, melted
1 egg white
oil for deep frying
icing sugar
cream or yogurt
Instructions
1.Cut the apples into 1/2 cm thick rings. Sift the flour and salt into a bowl. add the sugar. Gradually mix to a thick, smooth batter with the water and butter.
2.Whisk the egg white to a stiff snow. Fold into the flour mixture. Coat the apple rings with the batter. Fry in deep hot fat or oil for 2-3 minutes or until golden. Remove from the pan and drain on absorbent kitchen paper.
3.Dredge thickly with sifted icing sugar. Accompany with fresh single cream, soured cream or natural yogurt.

Ingredients
6 large apples
1/2 cup flour
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoon sugar
fresh lemon juice
1 egg, separated
1/2 cup milk
powdered sugar, sifted
Instructions
1.Peel and core apples. Slice crosswise into 1/2" rings, dropping slices into water acidulated with lemon juice as they are sliced.
2.Sift flour with cinnamon, nutmeg, and sugar.
3.Beat egg yolk with milk. Add egg mixture to dry ingredients and beat until smooth.
4.Beat egg white until stiff peaks form. Fold egg white into batter.
5.Drain apple rings and pat dry on tea towel. Heat oil or shortening to 375 degrees.
6.Dip apple rings in batter, coating both sides. Drop rings onto hot oil, five or six at a time (one layer, not overcrowded). Fry until golden brown, turning once, about five minutes.
7.Remove to paper towels to drain. Sprinkle with powdered sugar.
