Makes 24 small balls
1/2 pound cheddar, shredded (2 cups)
4 tablespoons (1/2 stick) butter, softened
2 tablespoons medium sherry or beer
Paprika
Minced parsley
Combine cheese and butter, beat until smooth; gradually beat in sherry or
beer. Form into tiny balls. Roll half the balls in paprika and half in
parsley. Chill. Serve alone or on round crackers.
