Recipe For Potato Candy


1 medium-sized potato, boiled and mashed fine; add 2 teaspoons butter, 1/4 pound coconut, 1 teaspoon vanilla, stir in 1 pound confectioners' sugar and beat until creamy.

Put down in a buttered pan until hard; make 1 inch thick and pour over it 2 melted squares bitter (dark) chocolate. Put in a cold place for 2 hours and cut in squares to serve.

CUSTARD RECIPE AND BUTTERMILK CANDY

Baked Egg Custard Recipe

Whites of four eggs, one cupful of granulated sugar, one teaspoonful of vanilla, one and one-half pints rich milk. Stir the eggs, sugar and vanilla together. Add the milk, heated, but not boiled, and strain. Pour into custard cups; stand in a pan of hot water and bake in a moderate oven until firm in the center. Test by running a knife into the custard; if it comes out clear, it is done.

Buttermilk Candy Recipe

Boil together 2 cups sugar, 1 cup buttermilk, and butter size of a walnut until it forms a soft ball in water. Remove from the fire and beat until smooth and creamy. Pour into buttered pans and cut into squares when cool.
