Shrimp Lover Squares

1 8-ounce tube refrigerated crescent rolls


8 ounces cream cheese -- softened

1/4 cup sour cream

1/2 teaspoon dill weed

1/8 teaspoon salt

1/2 cup seafood sauce

24 cooked medium shrimp -- peeled and deveined

1/2 cup chopped green bell pepper

1/3 cup chopped onion

4 ounces shredded Monterey jack cheese



In a greased 13x9" baking dish, unroll crescent dough into one long

rectangle; seal seams and perforations. Bake at 375 degrees for

10-12 minutes or until golden brown. Cool completely on a wire rack.

In a small mixing bowl, beat the cream cheese, sour cream, dill and

salt until smooth. Spread over crust. Top with seafood sauce,

shrimp, green pepper, onion and cheese. Cover and refrigerate for 1

hour. Cut into squares.

Cranberry Feta Pinwheels

1 8-ounce carton whipped cream cheese


8 ounces crumbled feta cheese

1/4 cup chopped green onions

1 6-ounce package dried cranberries

4 10-inch flour tortillas



In a small bowl, combine the cream cheese, feta cheese and

onions. Stir in cranberries. Spread about 1/2 cup of the mixture

over each tortilla and roll up tightly. Wrap with plastic wrap and

refrigerate for at least 1 hour. Cut each rollup into 10 slices.

Here's an easy way to make old fashioned apple dumplings.



1 Granny Smith or other cooking apple

1 Can Pillsbury Crescent Rolls

I Can Mountain Dew

1/2 Stick butter



Melt butter in 8 x 8 square baking dish. Open rolls and separate

the triangles. Peel, core and cut apple into one wedge for each roll.

Lay wedge of apple on large end of each triangle, sprinkle with

cinnamon and roll up. Roll each one in the melted butter and arrange

in dish. Pour Mountain Dew over the rolls and bake about 35 minutes in

a 350 oven or till the liquid has evaporated to a syrup and the tops

of the rolls are brown.

Ham Loaf

Ham Loaf


1 pound fresh ground pork

1 pound cured ground ham

1 cup bread crumbs

1 cup milk

Salt and pepper, to taste



Mix all ingredients together, shape into a loaf and bake at 350 degrees F for 1

1/2 to 2 hours. At the end of 1 hour, pour Sauce over the ham loaf.



Sauce

3/4 cup brown sugar

1 teaspoon dry mustard

1/2 cup water

1/2 cup red wine vinegar



Mix all ingredients and bring to a boil before pouring on ham loaf.

Ground Cherry Pie

Ground Cherry Pie




Ground cherries, also known as husk tomatoes, produce tiny tomato-like fruits in

papery husks on low, lanky bushes. This is an old Mennonite recipe with a crumb

topping.



2 1/2 cups pitted ground cherries

1/2 cup packed brown sugar

1 tablespoon all-purpose flour

1 tablespoon water

1 (9-inch) pie shell

3 tablespoons all-purpose flour

3 tablespoons granulated sugar

2 tablespoons butter



Preheat oven to 425 degrees F.



Wash ground cherries and place in unbaked pie shell.



Mix brown sugar and 1 tablespoon flour and sprinkle over cherries. Sprinkle

water over top.



Mix together the 3 tablespoons flour and 3 tablespoons sugar. Cut butter in

until crumbly. Top cherry mixture with crumbs.



Bake for 15 minutes. Reduce oven temperature to 375 degrees F and continue to

bake for 25 minutes.



Chicken and Dressing Casserole

2 quarts bread, crumbled


1/2 cup melted butter, divided

1/4 cup cooked, diced carrots

1/2 cup celery, finely cut

1 cup cooked, diced potatoes, salted

1 whole cooked chicken, cut into small pieces

3 eggs, beaten

2 cups milk

Salt and pepper to taste

1/4 cup parsley, finely cut



Brown bread in butter in skillet, turn often. Remove from heat. Mix in carrots,

celery, potatoes and chicken.



Beat eggs; add milk, salt and pepper and mix together. Put 1/4 cup butter in

baking pan; brown. Pour dressing in. Bake at 350 degrees F to 375 degrees F

until browned all over.

Beef Tips

1/2 cup flour

1 teaspoon salt

1/8 teaspoon pepper

4 pounds beef or sirloin tips

1/2 cup chopped green onions

2 cups sliced mushrooms

1 10 1/2 ounce can condensed beef broth

1 teaspoon Worcestershire sauce

2 teaspoons tomato paste or ketchup

1/4 cup dry red wine or water

3 tablespoons flour

buttered noodles



Combine 1/2 cup flour with the salt and pepper and toss with beef

cubes to coat thoroughly. Place in crockpot.



Add green onions and mushrooms.



Combine with beef broth, Worcestershire sauce and tomato paste or

ketchup. Pour over beef and vegetables; stir well.



Cover and cook on low setting for 7 to 12 hours. One hour before

serving, turn to high setting.



Make a smooth paste of red wine and 3 tablespoons flour; stir into

crockpot, mixing well. Let thicken and serve over hot buttered

noodles.

Easy Crockpot Spaghetti Sauce

Easy Crockpot Spaghetti Sauce




8 ounces Italian sausage

1 pound lean ground beef

2 cans (14.5 ounces each) diced tomatoes with juice

1 cup chopped onion

1 can (8 ounces) tomato sauce

1 can (6 ounces) tomato paste

1/2 cup chopped green bell pepper

1 to 2 tablespoons sugar

1 to 2 teaspoons salt, or to taste

2 cloves garlic, crushed

2 teaspoons dried leaf basil

dash ground red pepper or red pepper flakes, if desired



Remove sausage from casings; brown in a heavy skillet along with ground beef.

Break up sausage and ground beef while browning; drain well.



Add sausage and beef to crockpot, along with all remaining ingredients. Cover

and cook on LOW setting for 8 to 10 hours or HIGH for 4 to 5 hours. Serves 8 to

10.
This sauce can be frozen.

2 med apple

1/2 c apple juice

7 oz caramel candy

1 tsp vanilla

1/8 tsp ground cardamom

1/2 tsp ground cinnamon

1/3 c peanut butter, creamy

7 slices angel food cake

1 qt vanilla ice cream

Peel, core and cut each aplle into 18 wedges; set aside. Combine apple juice,

unwrapped caramel candies, vanilla, cardamom and cinnamon. Drop peanut butter, 1

tsp at a time, over ingredients in crock pot and stir. Add apple wedges; cover

and cook on LOW for 5 hrs. Stir thoroughly, then cook 1 hr more. Serve approx

1/3 cup of warm mixture over a slice of angel food cake or ice cream.

6 green-tipped bananas, peeled

1/2 cup flaked coconut

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup dark corn syrup

1/4 cup butter or margarine, melted

2 tsp grated lemon peel

1/4 cup lemon juice



1. Put bananas and coconut into large enough CP to fit in single

layer. Sprinkle with cinnamon and salt.

2. Mix corn syrup, butter ,lemon peel, and lemon juice; pour over

bananas.

3. Cover and cook on Low 1 to 2 hours.
