Jewel Box Cookies | Country Cooking Recipes

Ingredients:

 1 cup plus 2 tablespoons All Purpose Flour
• 1/3 cup sugar
• 1/2 cup butter, softened
• 1 large egg yolk, beaten
• 1/2 teaspoon vanilla extract
• 1/4 cup your favorite jam or preserves





Directions:

1 COMBINE flour and sugar in large bowl. Cut in butter with pastry blender or two knives until coarse crumbs form. Add beaten egg yolk and vanilla. Mix until dough holds together. 
2 SHAPE into small balls using half teaspoonfuls. Place 1-inch apart on cookie sheet. Make small indentation in center of each cookie. Chill 20 minutes.
3 HEAT oven to 350°F. Fill each cookie with scant 1/4 teaspoon jam, jelly or preserves.
Bake 11 to 13 minutes or until just golden around the edges.
TIP For added sparkle, unbaked cookies may be rolled in coarse bakery sugar crystals before being placed on cookie sheet to chill.

Homemade Cookie Mix | Country Cooking Recipes

8 Cups Pillsbury All-Purpose flour
4 Cups Sugar
4 Teaspoons baking powder
3 Teaspoons salt
2 2/3 Sticks Baking Sticks Butter Flavor All-Vegtable Shortening

Directions

To create your base mix, combine
flour
sugar
baking powder
salt
in a large bowl.  Cut in shortening with a pastry blender until mixture resembles coarse meal.
Add remaining ingredients
Store in airtight container in freezer for up to six months.

Beautiful Disasters

Tiger Butter

(from Life and Kitchen)
1 cup semisweet chocolate chips (I used dark chocolate chips, my preference!)
1 cup white chocolate chips
1/2 cup creamy peanut butter
  1. Line an 8×8 inch baking pan with parchment paper or aluminum foil.
  2. Melt the chocolate/dark chocolate chips either in a double boiler or the microwave. I prefer the double boiler, but whatever floats your boat!
  3. Pour melted chocolate/dark chocolate in the prepared 8×8 pan.
  4. Melt white chocolate chips with creamy peanut butter in double broiler or microwave(about 1 minute)
  5. Pour melted peanut butter mixture on top of chocolate/dark chocolate layer.
  6. Using the stick-end of your spoon, swirl the chocolate and peanut butter to make “tiger” stripes!
  7. Pop into the fridge for about an hour and cut into squares when cool. Enjoy :)

Hot Browns

Originated by a chef at the Brown Hotel in Louisville, Kentucky, Hot Browns are a delicious open-faced sandwich that features toast topped with turkey, tomato and bacon and a rich cheese sauce. This lighter version has fewer fat and calories, without losing the taste.

Sauce:
1 1⁄2 tablespoons of butter
2 tablespoons all purpose flour
1⁄4 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon black pepper
1 cup 2% milk
1⁄2 cup shredded reduced fat extra sharp cheddar cheese
1⁄2 teaspoon Worcestershire sauce
1/8 teaspoon dry mustard

Remaining Ingredients:
12 slices Heiner's Giant white bread, toasted
3 cups shredded cooked turkey
12 slices tomato
5 bacon slices, crumbled
1⁄4 cup grated fresh Parmesan cheese

Preheat broiler.

Arrange toast on a large baking sheet. Arrange turkey evenly over toast. Drizzle sauce evenly over turkey; top each toast slice with 1 tomato slice. Sprinkle evenly with bacon and Parmesan cheese. Broil for 7 minutes or until thoroughly heated and lightly browned. Serve immediately.

Yield: 6 servings.

 

Hot Turkey Sandwiches

Serve these quick to make sandwiches for lunch on the Friday after Thanksgiving or anytime you have turkey leftovers. Cranberry-shallot sauce adds a sweet, tangy flavor. Bottled gravy will work fine in this recipe.

8 Slices of French Italian Bread
4 tablespoons light mayonnaise
1⁄4 cup turkey gravy
8 bacon slices, cooked
Sliced, cooked turkey breast
4 slices of provolone cheese, halved
1 cup arugula or baby spinach
1 tablespoon of cranberry-shallot sauce

Pre-heat oven to 400 degrees

Place bread slices on a baking sheet. Spread mayonnaise evenly over 4 bread slices. Spread turkey gravy evenly over remaining bread slices. Top the mayonnaise-spread slices evenly with bacon, turkey and provolone cheese. Bake at 400 degrees for 10 minutes or until cheese is melted.

Top cheese evenly with arugula. Drizzle with cranberry-shallot sauce. Top with gravy-spread bread slices. Press together.

Cranberry-shallot sauce: Combine 1⁄4 cup cranberry sauce, 1 tablespoon minced shallots, 1 tablespoon cider vinegar, and 1 teaspoon Dijon mustard in a small bowl.

Serves 4

Stacking Stacking Coupons| Country Cooking Recipes

Did you know you can use more than one coupon for a single item at the grocery store?  It's called "coupon stacking," a technique that seasoned coupon clippers use to double or triple their savings.  In some cases, they even walk out of the store with items they got for free!

here's how it works:  First, you need to distinguish between manufacturers coupons (MQ) and in-store coupons--coupons that stores like Meijer, Kroger, Target, CVS and Walgreens print in their weekly ads and publish on their websites.  you can even get in-store coupons from Catalina machines.

Catalinas are coupons that print from Catalina machines at checkout.  you trigger the printout when you buy items the store is promoting

Catalinas often offer a few dollars off your next purchase at the store, but sometimes they offer savings on products instead.  When you combine one of these in-store coupons with an MQ for the same item, this is coupon stacking.

Doubling Up the Coupon Value
Lets say you've clipped a coupon for 1.50 off two boxes of General Mills cereal from the Sunday paper.  By itself, this is not much of a savings.  But what if you could combine that coupon with a Catalina printed at your last trip to Meijer or Kroger for $1.50 off your next purchase of two boxes of Cheerios?   You can use both coupons for the same two boxes of cheerios and save $3.

Heres where it gets interesting.  Instead of rushing to the store immediately, hand on to those coupons until Meijer or Kroger advertises three boxes of Cheerios for $5.00 in their weekly ad.



Each box of cereal would cost you roughly $1.66 without the coupons.  When you add your in-store coupon and MQ, you save an additional $3.00.  This works out to be one box of cheerios for free and a second box for just 32 cents!

Remember, you don't have to purchase all three boxes to get each box for $1.66, either.
Each box automatically rings up at this price no matter how many you buy.

Don't be afraid to clip, collect and stack
Even the most hesitant coupon clippers can use stacking to double or triple their savings.

I guarantee that the first time you walk out of the store with free items in your cart, you'll be smiling all the way to the bank.  Its very easy to do, once you get the hang of it.
