Easy Rhubarb Dessert

1 package Yellow cake mix
5 cup Chopped fresh or frozen-rhubarb
1 cup Sugar
1 cup Heavy cream

Mix cake as instructed on package. Pour batter into a greased 13" x 9" x 2"
baking pan. Spread rhubarb over batter. Sprinkle with sugar; pour cream
over top. Do not mix. Bake at 350 degrees for 35-40 minutes or until cake
tests done.

CINNABONS

Makes 20 rolls


DOUGH:

1 c. milk
1 egg, beaten
4 T. melted butter
7 T. water
1 box instant vanilla pudding (3.4 oz. box)
4 c. bread flour
1 T. sugar
1/2 tsp. salt
2 1/2 tsp. yeast

Add ingredients to bread machine according to manufacturer's directions. Use
dough setting.

FILLING

1/2 c. butter, softened
1 c. brown sugar
2 tsp. cinnamon
1/4 c. chopped walnuts, optional
1/4 c. raisins, optional


FROSTING

4 oz. cream cheese, room temp.
1 T. milk
1/4 c. butter, softened
1 1/2 c. powdered sugar
1 1/2 c. powdered sugar
4 T. butter, softened
1 1/2 tsp. vanilla
1 1/2 tsp. milk - plus
3 T. real maple syrup

Combine ingredients, adding more milk to get the right consistency. Roll dough
to 17 x 10 inches.

Combine first 3 filling ingredients and mix well. Heat in microwave 10 seconds
to make it spreadable. Spread over rolled-out dough with rubber spatula. Get as
close to the edges as possible. Sprinkle nuts or raisins over dough.

Starting with the widest end, roll the dough into a tight log. Cut into ½ -1"
pieces. Place in a lightly greased
9 x 13 (11 x 15 would be better) baking dish with sides. Put in a draft-free
place and allow to rise until double.

Bake at 350 F. for 15 - 20 minutes. When rolls are cooled, frost.

Amish Pork Chops

8 pork chops
1 c. ketchup
1 can celery soup
1/2 c. chopped onion
1 or 2 tbsp. Worcestershire sauce


Mix the ketchup, celery soup, chopped onion and Worcestershire sauce together and pour over the pork chops in a buttered casserole dish. Bake at 275 degrees for 2 hours.

Winter Solstice Tea Mix
~~~~~~~~~~~~~~~~~~~
2 cups Tang or other orange-flavored drink mix
2 cups sugar
1/2 cup instant tea
1 3oz. packet lemonade mix
1/2 tsp. cinnamon
1/2 tsp. cloves

Label: Put 1 to 2 teaspoons into a cup or mug. Fill with boiling water and stir for a wonderful Winter's day treat.

Corn Bread Mix
~~~~~~~~~~~~
1 cup flour
1 cup corn meal
1 tsp. salt
1/3 cup dry milk powder
1 Tbsp. baking powder

Sift ingredients together and put into a bag.

Label: Put dry ingredients into mixing bowl. In small bowl, combine 1 cup water, 1 egg, and 1/3 cup oil. Stir into dry ingredients and mix well. Pour into a well-buttered pie plate. Bake at 425 degrees for 25 minutes, or until golden.

Chili
~~~~
3 cups dried beans (pink, red, or kidney -- sorted). Put into a jar or large bag.
3 Tbsp. mild chili powder
2 Tbsp. dehydrated onions
1 Tbsp. granulated garlic
1 tsp. oregano
2 tsp. salt
1/2 tsp. cayenne pepper (optional)

Combine spices and put into a small bag.

Include in your gift basket:
1 8oz. can tomato sauce
2 14oz. cans diced tomatoes in juice

Label: Wash beans. Put into pot with spices. Cook until done, about 1 to 1 1/2 hours. Meanwhile, brown 1 lb. ground beef (if desired), and drain. Add meat to the beans with the tomatoes and sauce. Simmer to blend flavors.
Serve with Chili Corn Bread, if desired.

Vegetarian Black Bean Chili

3 cup black beans, sorted -- put in jar or bag.
3 Tbsp. dehydrated onion
3 Tbsp. granulated garlic
1 tsp. crushed oregano
2 tsp. salt
1/4 to 1/2 tsp. cayenne pepper (do not omit)

Combine spices in a small bag.

1 1/2 cups white rice in a seperate package.

Label: Wash beans. Put in pot with seasonings. Add 1 Tbsp. olive oil and cover beans with 2" water. Bring to boil and simmer until very well done (about 2 hours). Beans should be very soft. Add water as needed to keep beans from sticking. There should be some liquid left on beans when done. To cook rice, put 3 cup water and 1 tsp salt into a pot and when it boils, add rice. Lower heat, cover and steam for 20 minutes. Serve about 1/2 cup rice in bowl, and put beans on the top. Sprinkle with minced cilantro, finely chopped green onion, and a squeeze of lime juice. This is very healthy. It has almost no fat, and is mainly from the bottom of the food pyramid.

Cajun Red Beans and Rice

3 cups red beans, sorted -- put into jar or bag.
1/4 cup dehydrated onion
2 Tbsp. granulated garlic
1/4 cup dehydrated celery (optional)
1/4 to 1/2 tsp. cayenne pepper (do not omit)
2 tsp. salt

Combine seasonings in a small bag.
1 1/2 cups white rice in a seperate packet.

Label: Wash beans, put into pot with spices and 1/2 to 1 lb. pork neck bones, smoked. Cook until beans are well done and meat falls from bones. Take out bones, and shred meat into small pieces. Serve in large bowl with cooked white rice on bottom. Garnish with finely minced green onion, and pass bottle of hot sauce. To cook rice: Bring 3 cup water and 1 tsp. salt to boil. Add rice, cover and steam for 20 minutes.

Serve this dish with Cornmeal Pancakes. Use Corn Bread Mix, but add 1 1/2 cups water instead of just 1 cup. Make small, thick pancakes in a greased skillet, and serve with the beans and rice.

Milky Way Peanut Butter Cookies

Milky Way Peanut Butter Cookies

1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup butter or margarine
1 teaspoon vanilla extract
1/2 cup peanut butter
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3 dozen bite size Milky Way bars or Rolo candies

Cream together white sugar, brown sugar, butter or margarine, vanilla, peanut
butter and the egg. Add in flour, baking soda, baking powder, and salt.

Wrap 1 heaping teaspoon of dough around a bite sized candy piece. Bake 13 to 16
minutes at 350 degrees. Let cool 5 minutes before removing from pan.

Makes 3 dozen

"Cakes"

Triple Fudge Brownies~~

1 package(3.9 ounces) instant chocolate pudding mix
1 package(l8-1/4 ounces) chocolate cake mix
2 cups (12 ounces) semisweet chocolate chips
Confectioners' sugar
Vanilla ice cream, optional

Prepare pudding according to package directions. Whisk in cake mix.
Stir in chocolate chips. Pour into a greased 15-in. xl0-in. xl-in.
baking pan. Bake at 350" for 30-35 minutes or until the top springs
back when lightly touched.
Dust with confectioners' sugar. Serve with ice cream if desired.
Yield: 4 dozen

Roast Beef with Firecracker Sauce

Main Ingredient: Roast Beef
Cuisine Style: American
Yield: 12 Serving
Preparation Time: 20 min + marinade 4 hours
Cooking Time: 3-3.5 hours

6 lb Roast Beef, use Tenderloin Roast or Tip Roast for best results
Pre Roast Rub
4 Tbsp Paprika
2 Tbsp Onion powder
2 Tbsp Garlic powder
4 tsp Splenda artificial sweetner (type which measures equal to sugar)
2 tsp Chili powder
1/2 cup Oil, (120ml)

Barbecue Sauce
4 Tbsp Oil
2 small Onion, chopped finely
6 cloves Garlic, crushed
1 tsp Chilli flakes
2 Tbsp Paprika
3 cups Tomato paste
1/2 cup Cider vinegar
2/3 cup Equal Brown Sugar, or Splenda (
4 Tbsp Dijon mustard
2/3 cup Worcestershire sauce

Mix all the rub ingredients together in a bowl. Add the oil last making a
paste. Rub all over roast to include the fat side. Cover and refrigerate
overnight. I made this mix to cover a 6 lb roast beef.
To make Barbecue sauce, put the oil in small saucepan over medium heat. Add
the onion, garlic, and chilli flakes, and cook them for about 5 minutes.
Once onions are soft, add all the other ingredients plus 1/2 cup of water.
Let the sauce simmer for 20-30 minutes. It will thicken, season that to
finish the taste.
If it is in the oven, set your roast into a pan, fat side up, but put
something under it, such as cut up onions, or potatoes that your guest will
eat, not you! :-) What you are doing is making sure that it cooks evenly,
it runs the air flow around the roast instead of blasting the top. If on
the grill, preheat at medium for 10 minutes, put meat on grill, searing all
sides, then drop one burning making it an indirect heat. Throughout your
cooking time, you want to baste your roast with the Barbecue you made. I
recommend
basting every 20 minutes. This was the juiciest roast we have had in a long
time.
Cooking time will vary depending on what you are cooking but without a
bone, cook your 6 lb roast for 3 hours at 325F/170C for medium. If you what
it well done, add time. Internal temp should be 170F.

"Breakfast French Toast"



4 Points per serving (5 with syrup)



2 Slices low-cal bread

1/2 Banana sliced and mashed

1 Egg, beaten

1/8 C. Light Syrup (optional- 1 extra point)

Cinnamon



Blend beaten egg and mashed banana. Dip bread in mixture (this
will be lumpy) and fry bread in pam sprayed pan until done.
Serve with syrup, and sprinkle with cinnamon. Good and very
filling.

Makes 1 serving.

Bacon Wrapped Shrimp

Ingredients:
20 large shrimp
10 slices lean bacon, cut in half

Directions:
Have the grill on a medium heat.
Wrap the shrimp in the bacon and secure with toothpicks or several on a skewer.
Lightly oil the grill.
Cook for 3-4 minutes turning once.
Shrimp are done when the bacon is fully cooked.

SLOW COOKERY RECIPE

"Tangy and Tender Ribs"

3/4 to 1 c. vinegar
1/2 c. ketchup
2 T. sugar
2 T. Worcestershire sauce
1 garlic clove, minced
1 tsp. ground mustard
1 tsp.paprika
1/2 to 1 tsp. salt
1/8 tsp. pepper
2 lbs. pork spareribs
1 T. vegetable oil

Combine the first nine ingredients in a slow cooker. Cut
ribs into serving-size pieces; brown in a skillet in oil.
Transfer to slow cooker. Cover and cook on low for
4 - 6 hours or until tender. (Mine cooked 8 hours and
fell off the bone, but were very tender.

AandW® Onion Rings

A&W® Onion Rings

1 cup McCormick® Golden Dipt Tempura batter mix
1/4 teaspoon onion powder
1/8 teaspoon ground black pepper
1/2 cup water
1/4 cup beer (regular, or unleaded = non alcoholic)
1 extra large white onion, sliced 3/8" thick
6 cups vegetable oil in your deep fryer

Preheat the deep fryer to 375°. Combine the tempura mix with the spices and
liquid to make a batter, using a fork. There will be some small lumps.....don' t
worry about those. Slice the onion, and separate all of the rings. Dip the
individual rings in the batter, and drop into the preheated oil. Deep fry 3-5
minutes until golden brown. Remove to a paper towel lined plate, salt lightly,
and serve hot!

Halloween Pumpkin Cake

2 packages devil's food cake mix; batter prepared-- according to
-- package directions -- (18.25 ounces each)
1/2 teaspoon red food color
1/2 teaspoon yellow food color
2 containers -- (16 ounces each)-- white frosting
One 3-inch round sugar cookie
1 chocolate candy bar; (like Babe Ruth or -- $100,000 Bar)

Bake the cake batter in two Bundt pans, according to the package
directions. Let cool slightly, then remove from the pans and let cool
completely on a wire rack. While the cakes are cooling, in a medium-sized

bowl, combine the red and yellow food color with the white frosting,
mixing until the frosting turns bright orange. Place 1 of the cooled
cakes flat-side up on a serving platter and frost the top. Place the
second cake right-side up on the top of the first cake, lining up the
edges. Place the cookie in the center of the cake to cover the hole and frost
the cookie and the cake lightly with the orange frosting. (The ridges in the
cake should still be visible.) Place the candy bar on top of the cake, like a
stem. Serve or cover loosely until ready to serve.

NOTE: Use assorted goodies like gumdrops, candy corn, cookies, raisins,
miniature marshmallows or chocolate chips to decorate your pumpkin to look like
your favorite jack-o'-lantern.

NOTES : 20 to 24 servings

The AandW® Papa Burger

1/5 pound ground chuck
1 large sesame seed bun
1 tablespoon Kraft® mayonnaise
2 teaspoons Heinz® hamburger relish (the red stuff)
1/4 cup chopped iceberg lettuce
2 Vlasic® hamburger slices
1 slice American cheese
salt and pepper

Mix the mayonnaise with the relish to make the "secret sauce". Set aside for
now. Preparing the Papa Burger®: 1. On waxed paper, form the 1/5 pound beef
patty. It should be about 1/4 inch thick and 5 inches in diameter. Freeze at
least an hour. Fire up the indoor electric grill, or outdoor barbecue. Follow
the manufacturer' s instructions for pre-heating. Toast the buns by laying them
face down on the grill for 30-60 seconds. (About :30 for outdoor barbecue, :60
for indoor.) Cook the frozen beef patty about 2 mnutes per side, (outdoor
barbecue) or 3 minutes per side (indoor barbecue grill). Salt and pepper
liberally on both sides. Dress your toasted top buns (crown) in the following
order: special sauce pickles lettuce cheese
Place the cooked beef patty on top of the dressed bun, and add the bottom.
(heel) Microwave about 10 seconds to warm the bun, and serve.
OR...wrap in a 12"x12" sheet of foil, and warm in your oven (200°) 2-3
minutes--then serve.

The SUPER Papa Burger
Proceed as above, except cook two beef patties per burger instead of one,
placing the cheese in between the patties.
