Homemade Scallop Potatoes--Country Cooking Recipes

* 6 potatoes, sliced

* 1 onion, chopped

* 2 tsp. salt

* pepper

* 3 tblsp. butter

* 2 tblsp. flour

* 2 cups hot milk

* 1 cup grated cheese



How To Make It:



Melt butter in double boiler or sauce pan. Add flour, seasoning and stir smooth. Slowly add the hot milk stirring constantly. When it thickens melt the grated cheese in the sauce. Into a buttered baking dish or casserole put layers of the sliced potatoes, onions and cheese sauce, repeating until all ingredients are used. Bake in a moderate oven (350-f) for 1 hour.

Grated peel of 1 lime, plus 3 tablespoons lime juice
2 large bunches broccoli rabe, stems discarded, leaves and florets pulled apart
1 clove garlic, finely chopped
2 tablespoons finely
chopped garlic
2 pounds tomatoes, cored and coarsely chopped
4 teaspoons finely chopped
fresh ginger


1 tablespoon fresh lemon juice
2 teaspoons grated lemon peel
1/2 onion, thinly sliced

1 bunch broccoli, cut into florets (about 6 cups)
1 cup fresh basil leaves, thinly sliced
1/2 head iceberg lettuce, shredded
2 red bell peppers, cut into chunks

1/4 cup mint leaves, thinly sliced
1 cup loosely packed chopped

One 10-ounce tuna steak (about 1 inch thick)
1 pound flank steak
One 4- to 5-pound chicken, rinsed and patted dry

2 tablespoons vegetable oil
1 1/2 teaspoons granulated sugar


Thai Green Curry Paste - 14 oz jar by Mae Ploy Brand
2 tablespoons extra-virgin olive oil
1/4 cup
1 1/2 teaspoons garlic powder
1 pound medium pasta shells
1 tablespoon sugar
1 teaspoon vegetable oil
1 1/2 teaspoons salt
1/4 cup vegetable oil
2 cans unsweetened coconut milk
3/4 teaspoon pepper
Salt and pepper
4 teaspoons soy sauce
1 tablespoon honey
3/4 teaspoon smoked paprika
1/2 teaspoon dry mustard
2 teaspoons wasabi paste
1/4 teaspoon cayenne pepper
2 tablespoons extra-virgin olive oil
1/4 teaspoon dried ground sage
1 teaspoon black sesame seeds
Extra-virgin olive oil
One 12-ounce can beer, preferably Budweiser

Baked Beans With Bacon 






Enhance your canned baked beans with a healthy dose of bacon, bbq sauce, and hot sauce. I have used all kinds of beans, great northern and navy beans are my favorites for this recipe. The bbq sauce that I prefer is a sweet honey or smoked hickory.

Serves: 12

Ingredients

2 (52 ounce) cans beans, drained
1 to 2 pounds bacon, fried crisp and drained
1 cup ketchup
2 tablespoons Worcestershire sauce
1 cup brown sugar
3 roma tomatoes, chopped
1 cup barbeque sauce (your choice)
1 large onion, diced
1 green pepper, chopped
Garlic powder, to taste
1/2 ounce liquid smoke (optional, but nice)
Hot sauce, if desired to taste


Preparation method
1. Preheat oven to 325 degrees F.
2. Combine all ingredients in mixing bowl and pour into large Dutch oven or roasting pan.
3. Bake for 2 to 3 hours, stirring every 30 minutes or as needed. Don't overcook. Best when cooled and reheated.

BANANA CREAM DREAM

1/3 of a large banana, cut into 1/2-inch chunks
1/2 cup fresh pineapple, cut into 1/2-inch chunks
1/8 cup shredded sweetened coconut








or coconut syrup
2 large scoops ice cream



Place banana, pineapple and coconut in blender. Blend. Add ice cream and blend to desired consistency.

VANILLA MOUSSE CHEESECAKE

8 oz sugar free fat free whipped topping
1 tbs + 1 tsp vanilla
4 pkgs 8 oz each reduced fat cream cheese, softened

40 vanilla wafers, crushed

3 eggs

1 cup sugar or Splenda

3 tbs butter, melted


Heat oven to 325°. Mix wafer crumbs and butter, press onto bottom of 9" springform pan or other pan. Beat 3 pkgs cream cheese, 3/4 cup sugar and 1 tbs vanilla until blended. Add eggs, mixing until blended. Pour over crust.


-Bake 55 min. or until done. Run knife around rim of pan to loosen cake, cool completely in pan. Beat remaining cream cheese, sugar and vanilla in bowl until blended. Whisk in whipped topping, spread over cheesecake. Refrigerate 4 hours. Remove rim of pan before serving cheesecake. Garnish with berries, if desired
 
Makes 16 servings.

Bakers Secret Basics nonstick

Baker's Secret 116424001 Basics Nonstick 24-Cup Mini Muffin PanI got two of the BAKER'S SECRET BASICS NONSTICK 24-Cup Mini Muffin Pans, I really like and use them a lot specially during the Holidays, I don't have any Problems with Food getting stuck to the Pans, However, I use Mini-Baking Paper Cups is nicer to get a Mini-Cupcake with Foil or Paper Cup, I make so many Mini-Muffins or Mini-Cupcakes and give them as Gifts, I got these Pans about two years ago, and still look as Good as New! 
 
 
This pan is great for baking mini treats. So far, I've made cupcakes, muffins, and peanut butter chocolate chip cookie cups and they all turned out well. I use them with paper and without, and everything slides out of the pan easily.



I bake a LOT, and muffins and cupcakes are in my rotation quite a bit. I received this pan from my hubby for Christmas and this pan is by far the best pan I've owned (and I have owned a lot). I made muffins today and sprayed the pan with cooking spray and the clean-up was beyond easy, the spray just beaded up and wiped right off. The muffins released easily and clean-up was a non-event.




Baker's Secret Basics Nonstick 12-Cup Muffin PanThis pan may not be the cheapest, you can either buy good (this one made of carbon steel), or you can buy inexpensive and buy your pan again later, but I say buy the quality and you will have years of happy baking.
From someone who bakes frequently, I would encourage you to pick this pan up. It would also make a great gift along with a muffin or cupcake cookbook for a friend or bride-to-be.

2 cups chopped cooked meat
1 tbs onion, finely chopped

salt & black pepper
 
Don's Chuc Batter Mix Fish N Chips, 12-Ounce Boxes (Pack of 6)
Sift flour, baking power & salt into a bowl. Beat eggs with milk. Add


egg mixture to flour, stirring in flour gradually & beat to a smooth

batter. Stand for several hours before using. (Makes enough to go

with 2 cups of meat). Fold meat into batter & fry lge tbs of mixture on

both sides.

1 tsp dry mustard
 1 tsp curry powder

1 tbs vinegar
 2 tbs tomato sauce

1 tbs Worcestershire sauce
1  can pineapple pieces

Cut steak into cubes, fry in a little oil until brown add soup mix & 2

cups water, curry powder, mustard & vinegar, bring to boil & add

sauces, simmer gently until tender

(approximately 1 hour). Drain pineapple, add half juice & all pieces.

If it needs thickening, use some cornflour mixed with juice.

Vegetable Dumplings

2 eggs, beaten



•1 onion, finely chopped


•1 cup finely chopped Napa cabbage (about 1/2 of a small cabbage head), parboiled


•1 cup tofu (2 cakes), chopped


•¼ cup bean sprouts, blanched and chopped


•4 oz mung bean or sweet potato noodles (aka Chinese vermicelli), soaked and chopped


•3 cloves garlic, finely chopped


•1 Tbsp sesame oil


•3 Tbsp soy sauce


•2 tsp salt


•1 tsp pepper


•1 package circular mandoo wrappers (or Japanese gyoza or Chinese wonton wrappers)


Preparation:


•In a large mixing bowl, gently combine egg, onion, cabbage, bean sprouts, tofu, and noodles.
•In a separate bowl, combine garlic, sesame oil, soy sauce, salt, and pepper.


•Pour seasoning mixture over tofu and vegetables and mix with hands to combine.

•Place about 1 tablespoon of filling in the center of dumpling wrapper.


•Dip your finger in water and wet the outside edge of the top half of the wrapper.


•Fold the wrapper up to close and then crimp the edges.


•Repeat until the filling is gone.


•Then steam, boil, fry, or sauté the dumplings as you wish.
(Serves 6)
