4-chip Fudge

Ingredients

3/4 cup butter or margarine
14 ounce sweetened condensed milk
3 tablespoon milk
12 ounce package semi-sweet chocolate morsels
11 1/2 ounce package milk chocolate morsels
10 ounce package peanut butter flavored morsels
1 cup butterscotch flavored morsels
7 ounce jar marshmallow cream
1 1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 pound walnuts, coarsely chopped

Instructions

1.Melt butter in a heavy 4 quart saucepan over low heat; stir in sweetened condensed milk and milk.

2.Add all morsels, stirring constantly, until mixture is smooth. Remove from heat; stir in marshmallow cream and flavorings. Stir in walnuts.

3.Pour into a buttered 15" x 12" pan or two 9" x9" pans. Chill. Cut into squares. Store in refrigerator.

Angel Food Candy

Ingredients

1 cup sugar
1 cup dark Karo syrup
1 Tbsp vinegar
1 tsp. baking soda

Instructions

Boil sugar, syrup and vinegar to 290 degrees. Remove from heat and bring over to buttered pan. Add 1 teaspoon of sifted baking soda. Pour quickly in pan. Let cool. Break in pieces and dip in chocolate.

All Purpose Punch

Serves: 16

Ingredients
1 12-ounce can frozen orange juice concentrate, thawed
1 46-ounce can pineapple juice
1 2-liter bottle clear soda, such as club soda, ginger ale, or lemon-lime
Instructions
1. Reconstitute the orange juice with water in a punch bowl.

2. Add the pineapple juice and soda, stirring gently.

3. Add an ice ring and serve.

Makes about five quarts.

Tip: A large ring mold, such as a Bundt pan, molds an ice ring that will last several hours before it melts. Fill the pan with water and freeze overnight the night before for best results.

3 Berry Shakes

Ingredients
2 cup strawberries, frozen, unsweetened
1 1/4 cup skim milk
1/3 cup raspberry jam
1/4 cup blueberries, frozen, unsweetened
2 ounce lowfat Neufchatel cheese, cut up
Instructions
1. Place the strawberries, milk, jam, blueberries, and Neufchatel cheese in blender container; cover and blend until smooth.

2. If necessary, add more milk to make mixture the desired consistency.

3. Pour into 4 glasses.

4. Garnish with fresh strawberries, raspberries, and blueberries. Serve immediately.

2 2/3 cup flour

1/2 cup sugar

Instructions
1.Whisk together flour, spices, baking soda, baking powder and salt in a medium bowl and set aside.

2.With a hand mixer, whip egg whites until stiff but not dry.

3.Mix together buttermilk, pumpkin, sugar, vanilla and butter.

4.Make a well in the dry ingredients and fold in buttermilk-pumpkin mixture; do not over mix. Gently fold egg whites into batter.

5.Cook on a hot grill until bubbles form at the edges. Flip and cook 2 – 3 minutes more.

Cranberry Cream Cheese Muffins

Ingredients
1 cup butter, softened
8 ounce cream cheese, softened
4 eggs
1 1/2 cup sugar
1 1/2 teaspoon vanilla extract
2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 cup cranberries, fresh or frozen
1/2 cup pecans, chopped
Instructions
1.Preheat oven to 350 degrees F. Grease and flour 24 muffin cups.

2.Beat together butter and cream cheese until smooth and well blended. Add eggs, sugar and vanilla extract and mix only until blended.

3.Add flour, baking powder and salt. Fold in cranberries and pecan. Spoon into greased and floured muffin cups.

4.Bake 25-30 minutes. Remove immediately from muffin cups and allow to cool on wire rack. These are best slightly warm.

Baked Apple Upside Down French Toast

Ingredients

3 pound Granny Smith apples, peeled quartered and thinly sliced
6 tablespoon butter
3/4 cup granulated sugar
1 teaspoon cinnamon
8 slices French bread, sliced 3/4 inch thick
7 eggs
1/2 teaspoon vanilla
1/4 teaspoon nutmeg, freshly grated
1 cup milk
1/2 cup heavy cream

Instructions

1.Melt butter in large sauté pan and add sliced apples. Top apples with sugar and cinnamon and stir to incorporate. Sauté over medium heat until apples are limp and translucent, about 10 minutes, stirring so they don’t scorch.

2.Pour apples into 9 x 13” glass oven proof baking dish. Top with sliced French bread. Fill any spaces with small pieces of sliced bread so that entire surface is covered.

3.Whisk eggs with vanilla, nutmeg, milk and cream. Pour this mixture over the bread evenly so that all pieces absorb the liquid. Cover with plastic wrap and refrigerate until morning.

4.The next morning, pre-heat the oven to 400 degrees F. Bake French toast for 25 minutes or until bread is golden and custard is set.

5.Invert carefully onto a sheet pan and cut into squares to serve, apple side up. You may add the syrup of your choice and a dollop of crème fraiche.

Applebee's Broiled Salmon With Garlic Butter

Ingredients

4 5-ounce salmon filets
Melted butter, as needed
Pepper, to taste
Granulated garlic, to taste
Salt, to taste
Garlic butter, as needed

Instructions

1.Preheat skillet or grill to 550 degrees F. Brush raw salmon filets with melted butter. Do not reuse butter. Wash brush before using to dab with garlic butter before serving.

2.Shake/sprinkle salt, pepper and garlic over each side of the salmon. Place salmon in pan or on grill.

3.Cook fish approximately four minutes (varies with weight and thickness), turning halfway at two minutes on grill to achieve "diamond" grill marks.

4.Turn salmon over gently and cook approximately three minutes, turning halfway through.

5.Remove from heat and lightly dab top surface with garlic butter before serving.

Apple Fritters

Description
This apple fritter recipe is a definite crowd pleaser. Serve these as a special treat on a cold evening. You can even mix things up and create banana fritters with the same batter.

Ingredients
3 medium cooking apples, peeled and cored
50 g plain flour
pinch salt
1 teaspoon icing sugar, sifted
4 water
2 butter, melted
1 egg white
oil for deep frying
icing sugar
cream or yogurt

Instructions

1.Cut the apples into 1/2 cm thick rings. Sift the flour and salt into a bowl. add the sugar. Gradually mix to a thick, smooth batter with the water and butter.

2.Whisk the egg white to a stiff snow. Fold into the flour mixture. Coat the apple rings with the batter. Fry in deep hot fat or oil for 2-3 minutes or until golden. Remove from the pan and drain on absorbent kitchen paper.

3.Dredge thickly with sifted icing sugar. Accompany with fresh single cream, soured cream or natural yogurt.

Apple Ring Fritters


Description

Ingredients
6 large apples
1/2 cup flour
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoon sugar
fresh lemon juice
1 egg, separated
1/2 cup milk
powdered sugar, sifted

Instructions

1.Peel and core apples. Slice crosswise into 1/2" rings, dropping slices into water acidulated with lemon juice as they are sliced.

2.Sift flour with cinnamon, nutmeg, and sugar.

3.Beat egg yolk with milk. Add egg mixture to dry ingredients and beat until smooth.

4.Beat egg white until stiff peaks form. Fold egg white into batter.

5.Drain apple rings and pat dry on tea towel. Heat oil or shortening to 375 degrees.

6.Dip apple rings in batter, coating both sides. Drop rings onto hot oil, five or six at a time (one layer, not overcrowded). Fry until golden brown, turning once, about five minutes.

7.Remove to paper towels to drain. Sprinkle with powdered sugar.

BACON CHEESEBURGER

Bacon Cheeseburgers

Serves 4


Ingredients

1 pound ground beef
1 egg
1 package dry onion soup mix
½ cup cheddar cheese
½ cup mozzarella cheese
1 t. oregano
8 slices of cooked bacon

Mix all ingredients together and form into patties. Grill according to grill instructions. I usually throw these on the George Foreman grill for ten minutes to cook quickly. Top with bacon.
