Italian Love Cake




1 box chocolate cake mix



Topping

2 pounds ricotta cheese

4 eggs

3/4 cup sugar

1 tsp vanilla

Icing



1 cup cold milk

1 small box chocolate instant pudding

1/4 cup powdered sugar

1 8 oz container Cool Whip



Directions

Preheat oven to 350 degrees F.

Prepare cake mix according to package directions and pour into a prepared 13

x 9 inch pan.

Beat together the ricotta, eggs, sugar and vanilla until well mixed. Spoon

onto cake batter in pan and spread with a knife.

Bake at 350 F. for 60 minutes. As cake bakes, cheese filling sinks to

bottom.

To Prepare the icing:

Beat together the milk , pudding and powdered sugar . Fold in cool Whip and

spread on cooled cake.

Refrigerate for 6-8 hours before serving.
