CARROT-RAISIN SALAD

CARROT-RAISIN SALAD

Makes 8 servings

3 cups grated carrots
1 cup canned crushed pineapple, drained
1/2 cup raisins
1/4 cup chopped pecans or walnuts
1 cup mayonnaise
1/4 cup honey
2 teaspoons lemon juice

Mix carrots, pineapple, raisins and nuts in a bowl.

Combine mayonnaise, honey and lemon juice. Pour over carrot mixture. Stir to
