Zucchini Cookies

: Ingredients:

: 2 c. zucchini, shredded and drained (don't peel)
: 1 c. sugar
: 1 c. brown sugar, packed
: 1 c. butter flavored Crisco
: 2 eggs
: 1 tsp. salt
: 1 tsp. baking soda
: 3 1/2 c. flour
: 1 c. raisins, optional
: Directions:
:
Combine zucchini, sugar, brown sugar, Crisco and eggs, mix well. Add salt,
: baking soda, flour and raisins. Drop by teaspoon onto greased cookie sheet.
: Bake at 350 degrees for 10 to 12 minutes. Frost with cream cheese frosting
: while still hot (optional).
