FRENCH FRIED BUTTERFLY SHRIMP

2 pounds uncooked shrimp
1/2 teaspoon sugar
1 cup sifted flour
1 egg
1/2 teaspoon salt
2 Tablespoons shortening
1 cup water

Combine flour, sugar & salt in bowl. Add water, melted shortening &
egg. Beat until smooth. Dip shrimp in batter. Fry at 365F for 3 to 5
minutes. Servings: 4
