Carrot raisin mini muffins







2 eggs


1/2 cup plus 2 tablespoons vegetable oil


1/2 cup sugar


1 1/2 cups coarsely grated carrots


1/2 cup raisins


1 1/2 cups all-purpose flour


2 1/4 teaspoons baking powder


1/4 teaspoon salt


1 1/2 teaspoons cinnamon


1/2 teaspoon ground nutmeg






Preheat oven to 400 degrees. Line the muffin tins with paper cups or
