RED CABBAGE COLESLAW

Recipe Ingredients
1/2 head red cabbage, sliced thin
2 cups grated carrots
8 green scallions, chopped
2 green apples, cored, peeled and julienne

Dressing:
3/4 cup Extra Virgin Olive Oil
1/2 cup balsamic vinegar
2 cloves garlic, smash and chop
2 tbsp. honey
2 tbsp. good quality mustard
1/2 cup blue cheese, crumbled
salt and pepper to taste

Recipe Steps
1) Mix, cabbage, carrots, scallions and apples
2) Mix dressing ingredients and mix together with cabbage mixture
3) Cover and refrigerate until ready to serve
