LAZY DAISY CAKE

Lazy Daisy Cake

2 eggs
1 cup flour
1 cup sugar
1 tsp. baking powder
½ cup milk
1 tsp. vanilla
1 tbsp. butter pinch of salt


Heat milk and butter, Beat eggs, add sugar, beating
well. Stir in dry ingredients. Add vanilla and
carefully stir in hot milk and butter. Batter is very
thin. Bake in shallow pan (9” square pan) for 25
mins at 350 degrees F.

After baking, cover the top with the following:
Combine 2/3 cup brown sugar, 1/3 cup melted
butter, 1 cup coconut, 4 tbsp. cream. Spread on top
of baked cake and put under broiler until brown
and bubbly.
