MOM'S BEAN SOUP
2 cups beans (use the 15 bean soup mix, but toss out the seasoning packet)
5 cups chicken broth
1 chopped onion
1 10-14 oz. can diced tomatoes with juice
1-1/2 tsp. chili powder
2 tsp. oregano
1 tsp. cumin
1 tsp. garlic salt
2 tsp corn starch
Soak beans overnight - or - boil for one hour.
See Soaking Dry Beans.
Add all ingredients and bring to a boil.
Simmer for 2 hours or until beans are tender.
Blend until smooth.
Top with chips, cheese, sour cream if desired.
