OVEN-FRIED OKRA


•1/4 cup cornmeal

•1 teaspoon salt

•1/4 teaspoon pepper

•3 cups okra, sliced 1/2 inch thick

•1-2 tablespoons of oil

Combine cornmeal, salt, and pepper; mix well. Coat okra lightly with cornmeal mixture and spread evenly in a 13 x 9 inch pan. Bake at 400 degrees for 30 minutes (or until done) stirring often. Yield: 4 servings.
