YELLOW JACK CORN
•6 strips of bacon, fried and crumbled
•1 onion, chopped
•1 green pepper, cut into strips
•2 tomatoes, peeled and sliced
•4 ears of corn, cut off cob, about 2 cups
Melt butter in a large skillet. Add onion, green pepper, tomatoes, and corn. Stir gently, cover, and simmer for 10 minutes. Yield: 4-6 servings.
