Linguine with Fresh Tomatoes, Basil and Brie
1 cup diced tomato
1 garlic clove, minced
1 tablespoon olive oil
1 teaspoon balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
4 oz. linguine
3 oz. Brie, chopped (about 1 cup)
1/4 cup chopped fresh basil
1. Combine tomato, garlic, oil, vinegar, salt and pepper in large bowl; mash slightly with potato masher or back of spoon to lightly crush tomatoes.
2. Cook linguine according to package directions; drain. Toss with tomato mixture, Brie and basil.
2 (1 1/2-cup) servings
